Dosage/Recipe:
● Cream (liquid 30-35%): 520 g
● Milk (fresh 3-3.6%): 330 g
● Brûlée Flan Mix: 150 g
Technology: Heat the cream and milk to 80°C. Add the Brûlée Flan mix with constant stirring. Pour into
appropriate molds and refrigerate until set.
