LACTA 965 M – CREAM is a stabilizing system designed for the production of soured cream, freshly pasteurized or UHT cream, imitation cream, and high-fat dairy desserts. It effectively increases the viscosity of dairy products, even with a lower dry matter content. This stabilizer provides a light, creamy taste to products, including vegetable-based creams, while preventing delamination and separation of the oil phase, ensuring a smooth and stable product.
Used for: Soured cream, freshly pasteurized cream, UHT cream, imitation cream, high-fat dairy desserts.
Dosage: 0.15 kg to 0.45 kg per ton, based on the desired viscosity and product stability.
