BREADING “PIQUANT” – SPICED MIXTURE FOR CHICKEN WINGS

BREADING “PIQUANT” is a flavourful spiced mixture designed to give chicken wings a bold and spicy kick. It combines natural flavours, spice extracts, and hot pepper extract, along with a blend of different starches and flours to create a crispy, golden coating. The product is specially formulated to enhance the flavour and texture of chicken, making it ideal for fried chicken wings and other chicken dishes.

Ingredients:

  • Natural Flavours
  • Spice Extracts
  • Hot Pepper Extract
  • Combination of Various Starches and Flours

Method and Mode of Preparation:

  1. Preparation of Meat:
    • Wash, cut, and dry the cold meat (chicken wings or bites).
    • Season the meat with 13 grams of salt per 1 kg of meat.
    • Allow the seasoned meat to rest in the refrigerator for at least 30 minutes.
  2. Breading Process:
    • Prepare the Liquid BG 427: Dilute the dry mixture in a ratio of 1:1.6 with cold water. (Keep the mixture in the refrigerator before use).
    • Immerse the chilled meat into the Liquid BG 427, ensuring it is thoroughly coated.
    • Remove excess liquid from the meat and coat it with Final SFC Piquant for a crispy outer layer.
  3. Frying:
    • Fry the breaded meat at 160°C for 4 to 4.5 minutes until golden brown and crispy.

Application:

  • Best suited for chicken wings, chicken bites, or boneless chicken fillet. The “Piquant” breading provides a spicy, crispy coating that is perfect for fried chicken dishes.

  • This product works best when applied to well-marinated or seasoned chicken pieces, enhancing both flavour and texture for a satisfying, crispy bite.
